Crème Fraîche Cupcakes-Part Cinq

My friend Stephen complained when I completed my forth post about cupcakes that it wasn't titled Part Quatre, to which I replied "I think most people only know how to count to three in French". Well in honor of him and everyone out there who speaks better French than I (which, frankly isn't very hard), I'll continue with this charmingly cultural numbering theme.

So here we are with two more Crème Fraîche Cupcakes. And I know what you're thinking... "Is this guy going to go through his entire truffle and chocolate bar collections reinventing each flavor into one of these cupcakes?" Well, yes and no! We may just have to wait for Crème Fraîche Cupcakes-Part Dix-Neuf (that's Nineteen for everyone without Google-translator) to see exactly how many cupcake infusions I will create. Rest assured I have many, many flavor concepts floating around in my head just waiting to burst out.

Freshly debuted today we have:

Burnt-Caramel Marshmallow-Chocolate-crème fraîche cake+chile-burnt caramel filling+vanilla bean marshmallow filling+dark chocolate ganache glaze+toasted marshmallow topping.

Goat Cheese and Fig-Chocolate-crème fraîche cake+mission fig filling+fresh goat cheese filling+dark chocolate ganache glaze+cracked white peppercorn topping.

Yes, I say onward with the charming french numbers and educate the world! Looking forward to Crème Fraîche Cupcakes-Part Six!...yeah not very charming, it's the same in English :P


Anyway, I tried these new beauties today and they were just as scrumptious and tasty as the other cupcake offerings. The goat cheese and fig tastes like a fruit and cheese platter hidden inside a chocolate cupcake. Quite delightful. But my favorite was the burnt-caramel marshmellow! WOW! It's ooey gooey delicious and has a fun spicy kick to it. I ate them both at work today and all my coworkers were jealous! I suggest everyone go out and try one of Eclipse's fabulous cupcakes today! Call ahead for flavor offerings.

I bought nine cupcakes from you yesterday morning, and four of them were the burnt-caramel marshmallow ones - three of which were snatched up immediately when I offered them out.

They are *wonderful*! I've tried four of your flavors now, and these are by far, my favorites. I hope to see them again in the future, and thank you so much for making such amazing cupcakes!

Thanks for the feedback! I, too, think these are my best so far. There's just enough chile spice in the caramel to peak through all the dense chocolate and gooey marshmallow flavor. For those who aren't sure about the spice, I will have a Marshmallow Almond cupcake next week that is essentially without the caramel component and instead topped with Marcona Almonds. Anything with house-made marshmallows goes over well for me, but this past invention is pretty stellar!
